Freezer?! I don’t even know her!

Oh.. I love those jokes. I do it to any word ending in -er.

Before I went to North Carolina for a couple of weeks, I knew I needed to prepare, prepare, prepare! The first thing I did was figure out meals for the hubbs so he wouldn’t be stuck eating pizza and fast food everyday. I did a massive grocery store run and stocked up on his essentials (i.e. coffee, ice cream, and oreos) and then decided on freezer friendly meals to make.

1. Healthy Mama Barbecue Chicken
3 medium unpeeled  sweet potatoes, cut into 1/2 inch pieces
2 large green pepper, cut into strips
1 large red pepper, cut into strips
1 zucchini, chopped
1 medium onion, sliced
1 tablespoon quick cooking tapioca
2 pounds chicken thighs or drumsticks
1 8-ounce can of tomato sauce
2 tablespoons packed brown sugar
1 tablespoons Worcestershire sauce
1 tablespoon yellow mustard (I wasn’t sure if this meant actual mustard or the spice so I did a little of both)
1 clove garlic, minced
1/4 teaspoon salt

Dump everything into two gallon freezer bags, shake it up, seal, label and put in the freezer. Then put in crock pot the day you want to eat it!

2. Happy Husband Casserole

1 lb lean ground beef
2 cloves garlic, finely chopped
1 teaspoon salt
1/4 teaspoon black pepper
2 cans (8 ounces each) tomato sauce
4 cups dry egg noodles (1/2 lb)
5 scallions, chopped
1 package (3 oz) FF cream cheese, at room temp
1 container (8 oz) sour FF cream
1/2 cup shredded cheddar cheese

In large skillet, brown beef. Carefully drain off drippings Stir garlic, sugar, salt, pepper and tomato sauce into meat. Cover; simmer 15 minutes. Meanwhile, in large, deep pot of lightly salted water, cook noodles just until al dente, following package directions. Drain. In small bowl, stir together scallions, cream cheese and sour cream until well blended. Lightly coat bottom of shallow 2-quart baking dish with nonstick cooking spray. Arrange noodles in bottom of dish. Spoon meat sauce evenly over noodles. Carefully spread sour cream mixture over top. Sprinkle with cheddar cheese. Heat oven to 350°. Bake casserole in 350° oven until heated through and bubbly, about 30 minutes.

3. Serveral servings of Turkey Spaghetti Sauce

Brown turkey, add choice spaghetti sauce, and a bunch of italian seasonings and pretend that it took you DAYS to make it.

4. Turkey and Rice Casserole

1 lb lean ground turkey
1 medium onion, chopped
½ cup celery, chopped
½ jar Ragú pasta sauce, any flavor
1 cup water
1 tbsp chili powder
? cup uncooked rice
1 envelope Lipton dry chicken noodle soup mix
3 cups water
Sour cream
Avocado slices

Brown ground turkey in a skillet and drain. Add onion and celery and stir over heat 5 minutes.

Add pasta sauce, 1 cup water and chili powder and simmer 10 minutes. Pour into a casserole dish or disposable foil baking pan. Stir in rice and dry soup. If making ahead, cover and refrigerate until 40 minutes before you’d like to serve.

Before placing in oven, add 3 cups water to casserole dish and stir to combine. (If making for someone else, just direct them to add the water before baking.)

Bake uncovered at 350 degrees for 30 minutes (if meat mixture is warm or room temp) or 40 minutes (if chilled). Garnish with sour cream, avocado or your favorite hot sauce.

Needless to say, the man was set for the weeks I was gone. Here is what our freezer looked like when I left!

No soliciting!

JUST KIDDING! Please don’t go away, I like yall.

There are tons of advantages to my neighborhood. It’s like Pleasantville and there are tons of young families. It’s kept up nicely and there are parks everywhere. Seriously, when my brother came to visit his first words were, “So, this is where Desperate Housewives is filmed.”

But there are some draw backs to my neighborhood that are teaching me to have patience over the things I can’t control. 1) We live really near Fort Lewis so there are tons of artillery going off constantly. BOOM BOOM BOOM doesn’t bode well during baby’s naptime unless its my booty bouncing in the living room while I’m doing my dance routine…. because then Bud just wants to join in. 2) DOGS EVERYWHERE! While this is great for Roy when we go in the front yard to play, it SUCKS when all the neighbor’s dogs do is bark all.day.long.

BUT there is one thing I can control. Because our neighborhood has tons of houses, there are tons of solicitors. Libbie and Winston is a small business run by an amazing woman and mama, Anna Givens. She has the most precious collection of onesies, sippie cups, iphone covers, and you got it…. door signs! She customizes every item to make sure you have the colors and design that you want!

Here is the door hanger that I got for when solicitors come by and I feel like saying,  “If you ring my doorbell one more time I will literally sit on your face.” So thank you Anna for saving me from sitting on people’s faces.

For real yall isn’t it adorable!? So, just because she’s awesome and yall are awesome, Libbie and Winston is offering you a 10% discount until September 31 on ANY of her merchandise! Just use the coupon code, “Bud2011”. I have to say I’ve been eyeing the monthly onesies, they are the perfect shower gift. Check them out on Facebook while you’re at it for some sneak peeks of the new holiday designs!

Now if only I could get the dogs to stop barking and my booty to stop bouncing I’d be a happy woman…

Our weekend

Hey yallz! This weekend the weather was back to typical PNW weather… chilly and rainy. Looks like summer is officially over. Sniff sniff.

Friday was date night and my hottie hubby got us sushi to eat as we snuggled on the couch and watched How I Met Your Mother reruns.

YUMMERS!

Then Saturday morning I woke up to feed Bud then I crawled back into bed and fell back asleep for a bit. I woke up to my AMAZING hubby holding a pumpkin spice latte from Starbucks with a sweet smile on his face. The man had sneaked out (yeah its sneaked) and got me my favorite drink. Then we did our “Waffle Saturday” where Bud and I play in the living room while Sam makes us waffles. Seriously… be still my heart. I have an amazing hubby.

Not only does he get me sushi and lattes, he also has super sexy biceps.

Saturday night I ACTUALLY GOT OUT! There was a Pacific Northwest Blogger Meet up that I was invited to in Seattle. SO FUN! I was really nervous about leaving Bud and Sam for those 5 hours but Bud had been taking a bottle from Sam throughout the week so Sam kicked me out of the door and he had a “boys night” with Bud. I had a great time with ladies like Mandy and I’ll post some pictures later in the week. I definitely had a little too much fun in the photo booth.  Sam said Bud cried a good amount but all I know is that the house was silent when I got home at 10pm and my husband survived. While my boobs were rock hard from being gone for 5 hours from my little dude and I was nervous that Sam would have had enough, it was really fun to get dressed up and have a night with some fine ladies.

Shirt: Michael Stars, Skirt: Target, Boots: Steve Madden, Belt: Francescas

And I even got a run in without a stroller on Sunday! I took Roy with me of course and the whole time I swear he was skipping and singing, “It’s back to you and me Mom!!!” Sorry four-legged homie, we’ll be rockin’ it with a stroller for quite some time.

Hope you had a great weekend!

Live forever

This song is by my friend Ellie’s husband. They are in an incredible band Drew Holcomb and the Neighbors (check them out, you know you wanna). She’s the pretty blonde in the video.  It’s called “Live Forever”. Being a mother has already changed me in a lot of ways. The biggest thing is that now I spend my time thinking about the things I want Bud to experience. It’s no longer about me.  I want him to be able to run free through the woods with crazy blonde curls flopping in the wind like his dad used to have. I want him to know what its like to drive a boat so fast across the water that it feels like he’s flying. I want him to have his heart broken so that he can know what it feels like when true love puts it back together. I don’t want him to be afraid of anything and to be full of adventure as a child should be.

Each day I read the Storybook Bible to Bud. I know he can’t process what I’m saying but I love reading Truth to him and letting it take seed in his little brain hoping that one day, it’ll be his own Truth. I hope he comes to know the Lord in such a real and passionate way. I pray that prayer every single night as I’m rocking him to sleep. If he has that relationship with his Maker, then I know he’ll live forever.

Month Comparison Pictures

I know this isn’t an original idea BUT I wanted to take pictures of Bud each month on the same quilt to capture his growth. It’s insane to me how much he changes every day but having these pictures make it so real! It’ll be so fun on his 1st birthday to lay all the monthly pictures up as I’m sitting in the corner having a cocktail celebrating keeping him alive for a year and having my breasts back. But… that is quite a long time away so for now I’ll just have a cocktail and celebrate keeping him alive for over 2 months. Don’t worry, I’ll try and wait until 5:00… but I can’t make any promises.

Third time is the charm

The key to getting good pictures of your baby? Take lots of them and eventually one will turn out great.

P.S. We had a sunny week in Washington so the sun hat was actually used!

Moments

I won’t lie, I was really curious to see how I would handle being a stay at home mama. I have either worked or been in school or done both for the last decade of my life. What would I do all day? Then I realized that life with a baby is all about making a house a home and experiencing the moments.

You see, when he naps I’m definitely an efficient broad. I do laundry, cook, clean, and exercise. My husband deals with messes all day so I don’t want him to come home to one. I’m really blessed that Bud takes great naps so I can definitely get this done. But when he is awake, our life is full of playtime, songs, eating, dancing, grocery shopping, and picking on Roy.

When you spend all day with your child, you realize how in sync you become. I celebrate the little moments, I hurt when he hurts, and I breathe in his baby smell knowing that it’ll eventually turn into a sweaty outdoor boy smell (which I’ll savor as well until I Febreeze the crap out of him). However, when you spend all day with your child you can also be consumed with the baby timeline.

I think about the activities I should be doing to increase his communication and coordination.

I wonder when he’ll take a bottle consistently. He took one randomly on Sunday evening but it’s hit or miss.

The Sunday Miracle... an empty bottle

I wonder if he gets enough playtime with his Daddy. He doesn’t get home until around 7pm and has to work a lot of Saturdays so he doesn’t get to see a conscious Bud very often.

Thoughts fill my mind about when he will crawl, sit up on his own, wean off his reflux meds, reach for toys, or recite the constitution. I’m afraid his first words will be “ROY NO!” since he hears that 567 times a day. I’m afraid of his 4 month vaccines since I handled his 2 month ones about as well as Lindsey Lohan handles rehab.

There are millions of books to be read, checklists to be checked, and milestones to be reached. But for now, even at 5am I am going to close my eyes and soak in the moment that I get to sit in the quiet of the house with my son. They can’t write about that in any books or give me a box to check off for those kind of moments.

Labor Day Weekend

Hey yall! I hope you had a great long weekend. The hubby’s old roommate from college (Hey Mark!) came to visit for the weekend. It was so fun having someone from home around these parts. They were gone most of the weekend hanging out in Seattle and hiking and camping on Mt. Ranier but I got to see them for a bit.

Here are some pictures from the weekend, they are better than words anyways.

We dogsat our buddy Brutus so my nights were spent like this: cowboy boots on the floor from playing outside with the dogs, dogs passed out, and Bud and I holding down the party

Dancin' in our rocking seat

Blowing bubbles

Holdin' hands

Milk drunkiness

This was at 9:30pm... I think their college days are over.

Hard core

Hang ten symbol? Really?

There is our weekend in a nutshell. Peace out folks, I’m going to go teach my husband what to do with his hands in pictures so no more thumbs ups or hang ten symbols happen again.
